At the beginning of 2017, Ma Tingting and Harbin Master Fermentation Engineering, Agricultural Product Processing Storage and Finance Specialties Chen Cuiting, Ge Yangyang, Chen Qimeng, Sun Yingying and other students formed an entrepreneurial team to start research and development. At present, the edible film on the market is mainly glutinous rice paper, but its ductility is not good and the application range is limited. The Ma Tingting team wants to develop a new type of “edible packaging film” that is more applicable and more nutritious.

Ma Tingting said that with the help of Prof. Xu Wei, a key laboratory of the school’s food science and engineering program, members isolated and screened a strain of acetic acid glucobacter strains that produce high-yield microbial cellulose from traditional kombucha bacteria. The main raw materials, food grade sodium alginate, chitosan and glycerin were added as cross-linking agents and plasticizers to prepare edible packaging films. "In 2005, the coconut fruit prepared with microbial cellulose as the main raw material for fermentation of Acetobacter aceti was in line with national food safety, so the edible packaging film made by this method is also in line with national food safety standards." Member Chen Qimeng said.

The product is rich in dietary fiber hot water

“We developed a microbial fermentation to prepare dietary fiber edible packaging film. Compared with plastic products, the processing method is simpler, and all film-forming substances are food grade, can be used as casings, increase the intake of dietary fiber, and can also be applied. In the inner packaging of soup and a variety of convenience foods, which is characterized by melting with hot water, it is not only convenient and has nutritional value.” Team member Chen Cuideing said that this research result not only solves the problem of food packaging film safety, but also Relieve the pollution of plastic products.

During the R&D process, team members read a large number of documents. "We have failed many times. Every time we will meet and analyze the reasons, we will carry out the next experiment."
